Fresh Pasta Salad with Ham

This is a fresh and delicious salad using some bright spring flavours, asparagus, peas and fresh dill. A lovely creamy dressing with tender ham and Cheddar cheese.

Ingredients

1/2 lb (225 g) fusilli pasta

1 cup (250 mL) mayonnaise

1/2 cup (125 mL) dijon mustard

1 tbsp (15 mL) apple cider vinegar

1 small orange pepper, diced

1 cup (250 mL) peas, blanched

1 cup (250 mL) thinly sliced radishes

1 1/2 cups (375 mL) asparagus, blanched and cut into ½” (1 cm) pieces

1 cup (250 mL) diced Cheddar cheese

2 cups (500 mL) diced Maple Leaf® Original Natural Smoked Ham

1/4 cup (60 mL) chopped fresh dill

Directions

Bring a large pot of salted water to a boil. Cook pasta according to package directions, about 9 minutes. Drain and rinse with cold water. Transfer to a large bowl.

Mix mayonnaise, mustard and cider vinegar in a small bowl. Set aside.

Add all of the remaining ingredients to the pasta. Drizzle with dressing and toss to coat. Season to taste with salt and pepper and serve.
