  • 1(150 g) pkg Maple Leaf® Natural Selections Mild Genoa Salami, sliced into ½” strips
  • 200 gLarge Pasta Shells (approx. 18 shells), cooked per packages instructions, cooled
  • 1tbsp olive oil
  • 1small red onion, diced
  • 1garlic clove, finely grated
  • 475 gricotta
  • ¾cup parmesan cheese, divided
  • 1tsp fresh thyme
  • 2tbsp basil, roughly chopped
  • 1(700 g) Jar good quality tomato sauce
  • ½cup 35% cream
  • Salt and pepper
  • ½cup grated mozzarella cheese
  • ¼cup breadcrumbs
  1. Preheat oven to 375 F.
  2. Place a medium sized pan on low heat and add the oil and onion and cook for 3 to 4 minutes.
  3. Add the salami and continue to cook until the salami is lightly caramelized, approx. 3 minutes.
  4. Stir in the garlic and cook for another 30 seconds until fragrant. Let cool. Remove from pan and roughly chop the mixture on a cutting board.
  5. Combine the ricotta, ¼ cup parmesan cheese, thyme and salami mixture in a medium bowl. Season with salt and pepper to taste.
  6. Mix together the remaining parmesan, mozzarella and breadcrumbs in a small bowl.
  7. In a small pot add the tomato sauce, cream and basil and bring to a boil, cook for 2 to 3 minutes.
  8. In a 9” by 11” baking dish, flood the bottom of the dish with the tomato sauce.
  9. Divide the ricotta mixture amongst the pasta shells and arrange in a single layer in the baking dish.
  10. Sprinkle the cheese and bread crumb mixture over top of the pasta shells.
  11. Place in the oven on the middle rack and bake for 20 to 25 minutes until the cheese has melted and top is lightly golden.
  12. Remove from the oven and let sit for 5 to 10 minutes before serving.

  • 8Eggs, whisked
  • 3tbsp olive oil
  • 4slices cheddar cheese
  • Salt
  • Pepper
  • 4English muffins, split, toasted and buttered
  1. Heat oil in a large skillet over low to medium heat.
  2. Season eggs with salt and pepper and pour into skillet. Using a rubber spatula continually push eggs from the edge of skillet to the center until desired doneness.
  3. Assemble sandwiches by placing a slice of cheese onto base of English muffin.
  4. Divide eggs into 4 servings and place over top of cheese followed by 4 slices of salami and top of English muffin.

  • 4thick cut slices round sour dough bread
  • 2125 gram balls fresh mozzarella, sliced into 12 rounds
  • 8tbsp olive oil
  • 1tbsp Italian seasoning
  • 4tbsp pizza sauce, warm
  • 2tbsp parmesan, grated
  • 6slices large tomato
  • Basil – garnish
  1. Preheat oven to low broil setting. Line a large baking sheet with parchment paper.
  2. Drizzle olive oil onto each side of bread. Place toast onto baking sheet and broil toast for about 1 minute per side or until just golden. Remove from oven.
  3. Assemble toast by layering cheese, followed by tomato sauce, tomato slices and pepperoni. Sprinkle seasoning and parmesan cheese over top.
  4. Broil for about 3 to 4 minutes until cheese has melted and pepperoni has started to crisp.
  5. Drizzle with a little extra olive oil and garnish with basil if desired.

  • 18slices mild or hot genoa salami
  • 12slices provolone cheese
  • 18slices tomato
  • 1 ½cup head lettuce, shredded
  • 1cup spring mix lettuce
  • 1 tbsp Maple Leaf EZEE sub sauce, prepared
  • ¾cup mayonnaise
  • 1 ½tbsp parmesan cheese, finely grated
  • ¼tsp pepper
  • 1tsp lemon juice
  • 6large long wide hoagie or French crusty rolls, split
  1. Mix mayonnaise, parmesan, pepper and lemon juice in a small bowl and set aside.
  2. Place head lettuce and mixed greens in a large bowl and toss with sub sauce.
  3. Assemble sandwiches by placing base of bun onto a clean work surface. Spread a generous amount of parmesan mayo onto bread followed by two slices of cheese. Layer turkey followed by salami, chicken, sliced tomato and lettuce. Top with bun and repeat with remaining ingredients.
  4. Serve with lightly salted kettle chips or pretzels.

Make this your own! Try using MLNS black forest ham in place of turkey and cheddar in place of provolone. If you have any leftover parmesan mayo, keep in an airtight container for up to 3 days – great as a chip or vegetable dip.

  • 1175g pkg Maple Leaf® Natural Selections® Hickory Smoked Chicken Breast
  • 4pitas, warmed
  • 1tbsp vegetable oil
  • 3cups romaine lettuce, chopped
  • 10cherry tomatoes, quartered
  • 2tbsp red onion, finely diced
  • ¼cup red pepper, small dice
  • 1/3cup feta cheese, crumbled
  • 4tbsp tzatziki sauce, prepared
  • 1tbsp Greek seasoning
  • 1 ½tbsp sub sauce
  • 2tbsp black olives, chopped
  • 1680g bag crinkle cut French fries, prepared per package directions
  1. In a large skillet heat oil over medium high heat.
  2. In a large bowl combine lettuce, tomato, onions, peppers and feta. Drizzle sub sauce over top and toss well to coat.
  3. Carefully separate slices of chicken and sprinkle them with Greek seasoning.
  4. Pan fry chicken for 1 to 2 minutes turning frequently until just starting to brown. Remove from heat and keep warm.
  5. Spoon 1 tbsp of tzatziki sauce onto pita followed by salad mixture and chicken. Repeat with remaining ingredients. Serve immediately.
