  • 1cup Maple Leaf® Original Natural Smoked Ham, diced
  • 3corn tortillas, cut into 1-inch strips
  • 1cup salsa sauce
  • ½cup cheddar cheese, shredded
  • ½cup water
  • 4medium eggs
  • ½cup green pepper, diced
  • ½cup white onion, diced
  • ¼cup green onion
  • ½cup sour cream
  • ½tsp oregano
  • 2tbsp olive oil
  • Salt and pepper
  1. In a large skillet, heat the olive oil and add onions, green pepper, oregano, salsa sauce, enchilada sauce and water. Bring the mixture to a simmer.
  2. Add diced Maple Leaf® Original Natural Smoked Ham and let the mixture thicken.
  3. Add salt and pepper to taste.
  4. Stir in the tortilla strips.
  5. Crack 4 eggs onto the surface and cover the skillet. Cook for 4-5 minutes.
  6. Sprinkle with cheddar cheese and cover until the cheese is melted. Remove from heat.
  7. Top with sour cream and green onions.
  8. Serve immediately.

  • 1(375g pkg) Maple Leaf® Natural Original Smoked Sausage, diced
  • 4slices Maple Leaf® Original Natural Bacon, diced
  • ½cup cauliflower
  • ¼cup oats – finely ground
  • 3medium eggs
  • ½cup cheddar cheese, shredded
  • Salt & Pepper
  1. Preheat the grill to 350°F.
  2. Grease a 12-cup muffin pan with non-stick cooking spray.
  3. Cook diced sausage and bacon in a skillet over medium-high heat. Drain the fat and set aside to cool slightly.
  4. In a large mixing bowl, lightly beat the eggs. Add the cheese, cauliflower, oats, and fully cooked bacon and sausage. Mix until combined.
  5. Fill the prepared muffin cups about ¾ full. Bake for 15 minutes, or until golden brown.

  1. Preheat the grill to 350°F.
  2. While grill heats, scramble and cook 3 medium eggs as an omelet, set aside.
  3. Using a serrated knife, cut buns in half, lengthwise, and place on a tray. Remove top part of bun and set aside.
  4. Place the pineapple slices on the grill for 2 minutes per side. Set aside.
  5. Spread the Pineapple BBQ sauce on both sides of the buns.

  • 4Maple Leaf® Natural Top Dogs™ BBQ Format – sliced in half
  • 4hot dog buns, split in half
  • 4medium eggs
  • 2tbsp mayonnaise
  • 2tbsp ketchup
  • 1cup cheddar cheese, shredded
  • 1cup spinach
  • 2medium tomatoes, sliced
  • 1tbsp vegetable oil
  1. Scramble and cook 4 medium eggs, set aside.
  2. Add a tablespoon of oil into a nonstick skillet over medium-high heat.
  3. Fry Maple Leaf® Natural Top Dogs™ for about 1 to 1 ½ minutes, turning frequently.
  4. Toast hot dog buns and spread ketchup and mayonnaise onto either side of the bun. Add spinach and sliced tomatoes if desired.
  5. Slice Maple Leaf® Natural Top Dogs™ vertically. Lay open face on one half of toasted bun.
  6. Spoon scrambled eggs onto bun and sprinkle cheese over top. Top with other half of bun.

  • 8eggs, whisked
  • 1small red pepper, diced
  • 1small onion, diced
  • 1 ½cup frozen hash brown potatoes, small dice
  • 1tbsp vegetable oil
  • 2tbsp butter, divided
  • 1cup marble cheese, shredded
  • 4large soft tortillas
  • Salt

  • salsa, ketchup, hot sauce – optional
  1.  Heat oil and 1 tbsp of butter in a large non stick skillet over medium high heat. Add potatoes and cook stirring frequently for about 3 to 4 minutes. Add peppers and onions and cook for 2 to 3 minutes longer and season with salt and pepper. Turn heat down to low to keep warm.
  2. Heat oven to 425 degrees and line a baking sheet with parchment paper.
  3. Melt butter in a separate non stick skillet over medium heat. Pour in eggs and gently scramble until cooked through. About 3 to 5 minutes. Remove from heat.
  4. Lay tortillas flat on a clean surface. Divide scrambled eggs over top each followed by vegetables, bacon and cheese.
  5. Fold ends inward and tightly roll into a burrito. Place seam side down on prepared baking sheet.
  6. Spray the tops of the burritos lightly with cooking spray. Bake for about 5 to 7 minutes until golden brown and heated through. Broil on high for last minute of cooking if you like a crunchy burrito. Serve immediately with ketchup, salsa or your favorite hot sauce.

  • 1180-200g prepared pizza crust
  • ½cup pizza sauce, prepared
  • 8medium eggs, cooked scrambled
  • 1cup mozzarella cheddar blend shredded cheese
  • ½cup cherry tomatoes, halved
  • ½cup small diced sweet potato or yellow potato, cooked
  1. Preheat oven to 425°F.
  2. Place pizza crust on a clean surface. Spread pizza sauce onto crust leaving about a half inch border around the base. Sprinkle half the bacon over top. Spoon scrambled eggs evenly over pizza followed by cheese, tomato and potato. Add remaining bacon over top. Ingredients will appear to be piled high depending on the crust you choose.
  3. Place on center rack of oven for 8 to 10 minutes until cheese is melted and bacon is crispy.
  4. Allow to cool slightly and using a pizza wheel cut into 8 slices.

  1. Preheat oven to 375°F.
  2. Spray an 8×11” casserole dish with cooking oil.
  3. In a large bowl combine half the bacon bits, ham and 2 cups of the cheese. Stir to combine.
  4. On a clean surface, lay tortillas flat and divide mixture by spooning over top.
  5. Roll tortillas tightly and place side-by-side into casserole dish seam side down. They should be snug next to each other.
  6. In a large bowl add milk to whisked eggs and season with salt and pepper.
  7. Pour mixture evenly over top of enchiladas.
  8. Sprinkle with remaining cup of cheese and bacon bits.
  9. Cover with tin foil and bake in center rack of oven for 30 to 35 minutes or until set. Allow to rest 5 minutes before serving.
  10. Serve with salsa and guacamole.
